salad with baked tofu

Today was another day of a million tasks, but I got through enough that I had time to shower AND get a haircut. I’m awesome. I made baked tofu tonight, from someone else’s blog! It was so yummy that I hardly wanted to eat the salad, I just wanted more tofu ;). The marinade makes all the difference with tofu, I find, even though I’ve been eating tofu plain since I was 18. This is a bit of a revelation. I threw together the accompanying salad from what I had in the fridge- mixed greens, the last of the carrot salad, and of course, some avocado! I used a light dressing of apple cider vinegar and olive oil.
